Papa Banana's' Mango Magma Bacon Wrapped Scallops
Servings: 2 skewers | Prep Time: 15 minutes
INGREDIENTS:
8 strips of bacon
8 whole water chestnuts, drained
8 pineapple chunks, drained
8 scallops
2 tablespoons vegetable oil
1/4 cup teriyaki sauce
2 tablespoons honey
1 Tablespoon of PAPABANANAS Mango Hot Sauce
DIRECTIONS:
Cut bacon strips into thirds. Wrap each water chestnut, pineapple chunk and scallop individually with a piece of bacon and secure with a toothpick.
In a frying pan, heat oil and sauté the bacon-wrapped pieces over medium heat until bacon is crisp. Drain on paper towel.
In a small saucepan, combine teriyaki sauce and honey; mix well and continue cooking over medium-high heat until sauce thickens slightly.
Arrange on scewer placed on a white serving plate and add a lemon w/parsley and garnish, Drizzle Mango Magma On the plate and
serve with Papa Banana Mango Magma Hot Sauce on the side.
